氮气还是一种比较理想的制冷剂。氮气在常压下的沸点是-195.8℃(此时氮气为没有颜色的液体),当它与被冻食品相接触时,能吸收的蒸发潜热为198.9kJ/kg;再让氮蒸气升温-20℃,平均比热以1.047kJ/(kg·K)计,则能吸收184.1kJ/kg。

氮气的化学性质并不活泼,常温下很难跟其他物质发生反应,这是作为食品添加剂的一种非常关键而理想的性质。
