乙酸乙酯为无色、易挥发、易燃并带芳香气味的液体,主要用作香料和溶剂,对粘膜有中等度的刺激作用和麻醉作用.人接触较高浓度的乙酸乙酯,可引起眼、鼻、咽喉和呼吸道刺激症状.重复或长时间接触,有时可造成角膜混浊.对皮肤可引起皮炎及湿疹.高浓度可发生麻醉作用及肝、肾充血;持续大量吸入,则可发生急性肺水肿.慢性影响可有继发性贫血,白细胞增多,内脏浊肿和脂肪性变.偶有对本品发生过敏者,小量吸入后可因血管神经障碍而致牙龈出血.在溶剂的比较研究中,呼吸道阻留量,乙酸乙酯>甲苯>三氯乙烯>苯>丙酮>乙醇>乙烷.
